Avocado Veggie Bowl
Avocado is a delicious superfood, full of omega-3 and vitamins C, E, and K! It also adds a great creamy texture to the dressing on this veggie-full lunch! Super healthy and easy to make!

Preparation Time: 15 minutes
Ingredients
½ tbs oil
¼ yellow onion, chopped
½ cup green beans, trimmed
1/2 cup broccoli florets
1 cup kale
1 cup spinach
2 celery stalks, chopped
¼ cup quinoa
2 tbs pecans
Garlic Avocado Dressing
1 garlic clove, minced
¼ avocado
1 lime, juiced
1 tsp ground cumin
Instructions
Pour quinoa into a small pot with 1/2 cup of water. Bring to a boil, then simmer until cooked through. Meanwhile, heat oil in a small pan and add onion. Sautee for 2-3 minutes, then green beans and broccoli. Sautee another 4-5 minutes or until slightly browned.
Add kale and toss for about 30 seconds then remove from heat. Combine sautéed veggies with spinach, celery, quinoa, and avocado.
In a food processor or blender, combine garlic, avocado, lime, and cilantro. Pour over the salad, top with pecans (optional), and enjoy!
