Spinach and Mushroom Frittata​

Breakfast for dinner is always a great idea! Between the veggies, eggs, and avocado in this recipe, you’re sure to pack in the nutrients and feel great!




Ingredients


  • 1 tbs olive oil

  • ½ red onion, sliced

  • 1 cup spinach

  • ½ cup white mushrooms, sliced

  • 1 cup spinach

  • 2 eggs

  • ¼ cup almond milk

  • Dash of salt and pepper

  • ¼ avocado, sliced


Instructions


Heat oil in a small pan and then add onion. Sautee for 2-3 minutes, then mix in mushrooms. Sautee another 4-5 minutes or until slightly browned. Next add spinach and stir until slightly wilted. In a bowl, whisk eggs with almond milk, salt, and pepper. Spread the veggies evenly in the pan and pour eggs over the mixture. Without stirring, cook until the frittata is golden on the outside and the top is firm. Top with avocado slices and enjoy!
