While many “light and fresh” salads leave you hungry in an hour, this one is different, all thanks to quinoa. Quinoa is packed with protein and fiber, both of which will keep you feeling satisfied.
1 cup quinoa ( cooked)
1 cup arugula
1/4 piece red onion, (finely sliced )
1/4 cup black olives
1 cucumber (diced)
1 cup cherry tomatoes
1 garlic (minced or grated)
1 tsp mint leaves (or cilantro finely chopped )
2 tbsps extra Virgin Olive Oil
Sea Salt & Black Pepper
Combine all ingredients in a medium bowl and mix to combine.
